Cowboy Caviar Bruschetta

Cowboy Caviar- The style Sisters, summer appetizer, recipe


Seriously the easiest and best appetizer using food from your pantry!
Cowboy Caviar Recipe
1 can black beans (drained)
1 can corn (drained)
1 can diced Tomatoes
1-2 green onions finely chopped
1 avocado cubed
1/2 fresh lime
1/4 cup chopped cilantro
Salt and Pepper
1/4 cup red wine vinegar
1/4 cup olive oil
Mix all together (lightly fold in avocado) and refrigerate until ready to serve.

Bruchetta
2 baguettes loaves thinly sliced on an angle
Brush olive oil on one side, sprinkle lightly with kosher salt and lay on cookie sheet..oil side up
Broil the bread until lightly golden....watch the bread as it can burn quickly.
I served the bread on a lazy Susan with the bowl of Cowboy Caviar in the center.
The guys LOVED this!! It was gone in seconds!!
TIP- Keep canned ingredients on hand in your pantry and keep some baguettes in freezer wrapped in aluminum foil so you can be ready for drop in guests during the summer holidays.
